Directions
- Saute first 5 ingredients over med. Heat about 10 minutes, until vegetables are tender. Stir occasionally.

- Add all remaining ingredients except balsamic and Bring to boil.
- Simmer about 30 minutes until lentils are done
- Stir in balsamic vinegar.

- Serve. Add salt, pepper, and more Balsamic vinegar to taste.
- Top with crumbled Feta cheese.
