Tom's Tuscan Taters
Ingredients
2 lbs Red or Gold Potatoes
1/4 cup Celia's Classic Tuscan dipping oil OR Tuscan EVOO
Sea Salt, to taste
Optional:
Sour Cream
Green Onions
Bacon Bits
Directions
1. Preheat oven to 425 degrees.
2. Scrub potatoes (do not peel them). Slice into even sized cubes about 1”
3. If time allows, soak potatoes in cold water for 1 hour. (This removes starch and
makes for a fluffier potato). Drain and dry potatoes.
4. Toss potatoes in bowl with oil. (add more oil if needed)
5. Place on a baking sheet lined with parchment paper
6. Bake for 30 to 35 minutes until browned and tender
7. Serve with sour cream, fresh chopped green onions and bacon if desired.
