Peal and cut apples into small pieces. Add apples pieces and vinegar to a sauce pan. Cook on low for about 30 minutes until apples break down and have the consistency of a lumpy applesauce. You might need to add a little water if the mixture gets to thick. Remove from heat and cool.
Lay chips on your serving plate.
Top with apple mixture.
Drizzle on lots of caramel and top with whipped cream!
